Haskell’s Lobster and Sea Scallop Risotto is made with hard shell North Atlantic lobsters and dry Atlantic sea scallops that are landed right here at the docks on the East End of Long Island. A hard shell lobster is the best lobster, meaning they have grown fully into their shell and the lobster meat is as sweet, plump, and savory as a cold water lobster will get. A “dry” sea scallop is pure, meaning there is no additives or preservatives, just pure ocean scallop meat. To follow, we then separate these special hard shells from the lobster meat to make our lobster stock from scratch. With a special blend of lobster stock, clam stock, and white wine, the arborio rice is slowly cooked with shallot and turned by hand as the grains soak up all that is divine. Once the arborio rice is cooked and full of goodness, sea scallops, lobster meat, parmesan cheese, and fresh herbs are turned in to create an unforgettable risotto.
